Some of you wonderful bloggers have suggested that I share some things that I enjoy.
Well, this is not one of them, but what I finally did today was worth it.
I do not enjoy cooking.
When I get hungry enough for something and get in the mood I will cook. I cook enough of what I make to put in the freezer for later meals. Less cooking that way. :)
Needing to be gluten free for health reasons has brought challenges. Mostly it has been finding prepared foods that I can eat and not wanting to cook.
My sweet sister has to eat gluten free also. She has been a great help to me in finding foods I can eat.
I never was one to follow a recipe back when I cooked for my family. So I don’t mind so much making soups, stews and chili. I can make them pretty much like I always did. Just a few little changes.
Today I made vegetable soup.

I do follow directions on the gluten free cornbread, waffle and pancake mixes. It took awhile, but I do enjoy them now. I just wish they had left out the sugar in the cornbread mix.
I am not fond of sweet cornbread. The gluten free turns out great when I cook it in my iron skillet. For me there is no better way to cook cornbread than in an iron skillet.
