People who know me well know that I do not enjoy cooking. Being on a limited diet and preparing meals for one does not help in that matter.
For many years I cooked healthy meals for a large family. I enjoyed cooking back then. For me getting food to taste right for one is not easily done, therefore I no longer enjoy cooking.
Being able to eat some healthy foods cooked from scratch is a blessing.
When I get hungry enough for one of the few things I cook that tastes good to me I finally give up, give in and cook it.
One morning last week I was hungry for a good healthy breakfast. Breakfast foods are some of my favorites. It was good and I enjoyed every bite.

That looks delicious! You make your scrambled eggs the same way I do, with peppers and onions. Yumm !!! I really enjoy cooking too. I do most of the cooking at home, and like you, there are times I love it and times I don’t. I always want to cook something everyone will enjoy, but that’s not always how it goes. I’ve got a house full of very, very, very picky eaters, so we don’t always see eye to eye on meals.
Breakfast for dinner is even more enjoyable than in the mornings. FYI…

I’m so glad you have a blog, because I enjoy reading it. I cook good things for myself from time to time. I love breakfast foods and am thinking I should have eggs for the last meal of the day rather than carb-heavy things. That idea popped in my head when I looked at the lovely photo of your egg concoction with bacon.

Yum those eggs look good. I have a sausage/egg casserole you should try. It freezes well and one recipe should make at least four servings for you, I will post it some time soon.

I often have scrambles eggs with peppers and a slice of cheese melted on top. Then I top it with a little bit of sausage gravy and have a side of toast. One of my favorite breakfasts. :)

I tend to like sweet things for breakfast, but I like eggs once in a while. Dave makes them scrambled with cheese, bacon or sausage on the side, and a biscuit (which I put the meat in and add some molasses or sf jelly).
I’ve tried a Mexican dish called Migas that looks similar to what you made, but adds jalapeno, tomato, cheese, and tortillas cut into tiny pieces.

I sometimes add jalapenos to omelets. Your biscuit and molasses sound yummy. I haven’t had molasses in many years.

I’m trying to eat less bread. It’s the sugar that’s hard to kick. Being around my brother who is always bringing desserts from church, to my once weekly margarita.

Im not diabetic but I need to drop a few pounds and besides, sugar makes me hurt-yet it’s still so hard to stay away from!

What a nice thing to say, Mags! I think one of the things I enjoyed most when I first started to blog was finding new things and new people. Some become blogging friends and some do not. It still gives us a window into a different world view, and that is generally a good thing. Even if we do not agree, it is useful to understand someone else’s perspective and why they think that. Your breakfast looks great!
