I finally did it

Some of you wonderful bloggers have suggested that I share some things that I enjoy.

Well, this is not one of them, but what I finally did today was worth it.

I do not enjoy cooking.

When I get hungry enough for something and get in the mood I will cook. I cook enough of what I make to put in the freezer for later meals. Less cooking that way. :)

Needing to be gluten free for health reasons has brought challenges. Mostly it has been finding prepared foods that I can eat and not wanting to cook.

My sweet sister has to eat gluten free also. She has been a great help to me in finding foods I can eat.

I never was one to follow a recipe back when I cooked for my family. So I don’t mind so much making soups, stews and chili. I can make them pretty much like I always did. Just a few little changes.

Today I made vegetable soup.

I do follow directions on the gluten free cornbread, waffle and pancake mixes. It took awhile, but I do enjoy them now. I just wish they had left out the sugar in the cornbread mix.

I am not fond of sweet cornbread. The gluten free turns out great when I cook it in my iron skillet. For me there is no better way to cook cornbread than in an iron skillet.

    I am not sure if it is a regional thing, but corn bread has to be sweet for me and my family. They even sometimes add extra sugar to the jiffy mix!

    Yummy looking! Yes to not sweet cornbread. A pat of butter is plenty. And yes to cast iron cooking :)

    My preference is with just a little sugar for a touch of sweetness. I grew up on my mother’s utilitarian cornbread—no sweetness, but it would stick to you! And always with vegetable soup!

      Trying hard to like it with the little sugar the gluten free mix has in it. Being raised on it without sugar Keep enjoying it the way you like it.

    This looks like a healthy, yummy soup, Maggs. I vary my cornbread recipes/sometimes sweet, sometimes savory with added ingredients such as cheddar and jalepeno or fresh corn.

      It tasted good to have something homemade that was healthy. I have never tried corn in cornbread. I do love corn.

    I prefer my cornbread to taste like cornbread, so do not add sugar. If there is sugar, it should be only a small amount, like a spoonful in a large skillet of cornbread. I once ate at a soul food kitchen that had so much sugar in it, it seemed out of place with the food. I had never eaten cornbread that sweet. We also had a lot of hot water cornbread growing up, which did not have sugar either.

      The mix that I get doesn’t have much sugar, but I sure wish it had none. I have made hot water cornbread. If it has sugar it is more like cake to me…not cornbread. I am glad I am not alone in liking cornbread with no sugar. Thank you for your comment. Hugs

    Yum! That looks delicious. Cooking is not my fav thing either. So blessed to have a husband who does love to cook and I even have a son who is a Chef. GOD provides!

    Looks yummy Mags 😋 I make soups all winter. I like to cook but not just for myself! I make a dish and it lasts a few days or I freeze it. As for cornbread… Nobody knows what that is in Ireland 🤣 I used to make it in the States and always liked it more savoury with jalapeños xxx

      Thank you, Mae. Cooking for just myself is what I don’t enjoy. What I cook now doesn’t taste as good as it did when I was cooking for more people. I can’t seem to get soups and stews to taste how I like them to in smaller quantities. Oh, I like cornbread with jalapenos too especially with beans.

      If I eat just cornbread with butter on it I don’t mind a bit of sweet. I have eaten it that way a few times. I don’t eat it with butter on it otherwise. Keep enjoying it the way you like it. Hugs and blessings.

    Your soup looks so yummy, Mags! I also cook a family-sized meal and freeze some of it in single serve containers for later. I like to cook, but I sure don’t want to do it after a long work day. I never had such sweet cornbread until I came to southern Ohio. Everything is sweeter in the south, haha. The way they make it here it is more like a cake than a bread. I like it better than what we had in New York, lol.

      Thank you, Jean. You are right that it is more like cake than bread. I live in Arkansas not the deep south but still south. My family never made sweet cornbread. The only way that I care for something sweet is in deserts or a few treats. I am glad you enjoy cornbread the way you like it.     I like cornbread and enjoy it with or without sugar. I grew up in West Tennessee, where the dish was most often sugarless. I married a Yankee who much preferred a sweeter version, and our children voted with him. It has not yet occurred to me to bake cornbread just for myself.

      Growing up in Tennessee then I understand that you have eaten cornbread without sugar. I was born in Arkansas and have lived most of my life here. I never made sweet cornbread until I began using the mixes. I made it from scratch often before I had to go gluten free. Now I don’t make it so much. I sure miss that good ole country cornbread without sugar. Maybe one day you will bake some just for you. :) Hugs and blessings.

    Corn Bread, yum! I’ve never made it though. The soup looks fantastic, Mags! I love soup but the issues the sodium, making it at home would be better I guess. Happy Saturday!
